Hemp seed waldorf salad with chicken and coconut wrap

    • Gluten free, dairy free, fast, low fat and healthy. What more do you need?

      Ingredients/ Cooking and prep time 10 minutes.
      • Coconut meat wraps
      • Free range chicken breast/tenderloin
      • 3 tablespoons extra virgin olive oil
      • 2 tablespoons hemp hearts
      • 1 table spoon of dried dill
      • 1/4 cup red seedless grapes
      • 3 tablespoons walnuts
      • 2 slices of dairy free halloumi
      • A pinch of Himalayan pink salt and pepper
      • Fresh baby spinach leaves
      • 1/4 cup fresh diced parsley
      1. Cut chicken to desired bite size portions or keep in full tenderloins
      2. Grill halloumi slices until exterior is crispy (if desired)
      3. Heat oiled skillet or frying pan, grill chicken until just brown.
      4. Add finely chopped parsley, baby spinach, chopped walnuts, sliced grapes, dill, salt, pepper, hemp hearts and olive oil into a large bowl and toss.
      5. Add waldorf salad to wrap, place chicken and halloumi on wrap and fold
      6. Enjoy!!
