Ingredients/ Cooking and prep time 10 minutes.
- Coconut meat wraps
- Free range chicken breast/tenderloin
- 3 tablespoons extra virgin olive oil
- 2 tablespoons hemp hearts
- 1 table spoon of dried dill
- 1/4 cup red seedless grapes
- 3 tablespoons walnuts
- 2 slices of dairy free halloumi
- A pinch of Himalayan pink salt and pepper
- Fresh baby spinach leaves
- 1/4 cup fresh diced parsley
- Cut chicken to desired bite size portions or keep in full tenderloins
- Grill halloumi slices until exterior is crispy (if desired)
- Heat oiled skillet or frying pan, grill chicken until just brown.
- Add finely chopped parsley, baby spinach, chopped walnuts, sliced grapes, dill, salt, pepper, hemp hearts and olive oil into a large bowl and toss.
- Add waldorf salad to wrap, place chicken and halloumi on wrap and fold
