Roast pinenut, basil, cashew and hemp seed pasta sauce.

The perfect vegan pasta sauce, packed full of hemp goodness and the amazingly sweet taste of basil and the bold nutty flavour of hemp coupled with pinenuts and cashew. Fancy yourself a chef?       Ingredients.

      1/2 cup raw cashews, soaked for 30 mins in hot water
      1/2 cup pinenuts
      1/2 bunch fresh basil
      1/4 tsp salt
      Black pepper
      1/2 cup unsweetened, plain soy milk OR water
      1 Tbsp lemon juice
      A good few pinches of spirulina (or more. This is optional, but makes a cool minty colour!) .

      Method.

      1. Dry roast pinenuts in a frypan, over medium heat. Once browned, remove from heat and add to a high-speed blender.
      2. Drain cashews, and add to the blender with remaining ingredients, blending in high for 1-2 minutes until very smooth.
      3. Cook your chosen pasta as per packet instructions. While cooking, transfer your sauce to a saucepan and heat over a low flame, stirring through out.
      Serve pasta with whatever takes your fancy- I choose mushrooms, avo, extra pinenuts, hemp seeds and tahini.
